What do you need?
For six cookies:
- 400 g floury potatoes, peeled
- 400 g cod fillet
- 1 clove garlic, minced
- ½ egg
- 20 g flour
- 2 tsp dill
- 2 tsp parsley
- 2 tsp garlic pepper
- 1 spring onion, finely chopped
- salt, pepper and herbs to taste
- ½ tbsp olive oil
- also needed: blender or food processor
Preparation
- Boil the potatoes until done, drain them and let them cool. Cut the potatoes into pieces.
- Pat the fish dry with kitchen paper and cut the fillet into large pieces.
- Place the fish and garlic in a blender or food processor and puree until smooth and thick. Spoon the puree into a bowl and stir in the potatoes and the remaining ingredients except the oil. Use your (moistened) hands to form six fish cakes from the mixture.
- Heat the oil in a frying pan over medium heat and fry the fish cakes on both sides until golden brown and done.
