An easy pasta salad that is quick to prepare. Choose chicken thighs or the vegetarian option.
What do you need?
For two persons:

70 g uncooked whole wheat pasta

1 red onion

2 cloves of garlic

1 tbsp olive oil, for frying

150 g cherry tomatoes

200 g (vegetable) smoked chicken strips, or 200 g (vegetable) chicken pieces, fried

2 tsp pine nuts

2 tbsp pesto
Preparation

Cook the pasta according to the instructions on the package. Drain the pasta and rinse under cold running water. Let drain.

Peel and chop the onion and finely chop the garlic. Heat the olive oil in a frying pan and fry the onion and garlic over medium heat for about 3 minutes until translucent. Add the cherry tomatoes and chicken strips and fry for 2-3 minutes.

In the meantime, heat a second frying pan (without olive oil) and roast the pine nuts for about 3 minutes until they are light golden brown. Please note: this can go fast, so keep a close eye on them.

Toss the pasta with the pesto and the tomato-chicken mixture and sprinkle with the pine nuts.
