Zucchini spaghetti

What do you need?

For two persons:
  • 1 zucchini
  • 100 g cherry tomatoes
  • 2 tbsp (vegetable) pesto (ready-made or homemade)
  • 100 g (vegetable) feta (10% fat), cut into pieces
  • salt, pepper and herbs to taste
  • also needed: spiral cutter

Preparation

  1. Cut the zucchini into pieces of about 7-10 centimeters in length.
  2. Slide the knife with the smallest holes into a spiralizer. Insert a piece of zucchini into the spiralizer and twist it into thin spaghetti strands. Collect the spaghetti in a bowl. If you don't have a spiral cutter, you can also slice thin slices of zucchini with a cheese slicer. Cut the strings or slices into lengths that are easy to eat.
  3. Cut the cherry tomatoes in half or into quarters. Add the pesto, feta and tomatoes to the zucchini strings in the bowl and stir everything together. Season with salt and pepper.
