Baked sweet potato

What do you need?

For two persons:

  • 2 small sweet potatoes
  • ½ red chili pepper
  • oil
  • 200 g spinach
  • 1 clove garlic, minced
  • 2 tsp garlic pepper
  • 100 g cherry tomatoes
  • 80 grams (vegetable) feta (10% fat), cubed

Preparation

  1. Preheat the oven to 200°C.
  2. Scrub the sweet potatoes well. Poke holes in the potatoes with a fork.
  3. Place them in an oven dish and roast the potatoes in the oven for about 45 minutes.
  4. Remove the seeds from the chili pepper and finely chop the flesh (be careful with your eyes!).
  5. Heat the oil in a wok and fry the spinach with the pepper, garlic and garlic pepper until the garlic is translucent. Finally, fry the cherry tomatoes briefly.
  6. When the sweet potatoes are done, cut them open and fill them with the spinach mixture. Garnish with the cubes of feta and place the potatoes under the grill in the oven for another 5 minutes.
