Stuffed butternut squash from the oven

What do you need?

For two persons:
  • 1 bottle gourd
  • 1 red onion
  • 1 leek
  • 1/2 red chili pepper
  • 1 zucchini
  • 200 g mushrooms
  • 1 knob of butter
  • 1 tbsp piri-piri herbs
  • 100 g feta (10% fat) in pieces

Preparation

  1. Preheat the oven to 200 °C.
  2. Scrub the bottle gourd clean, cut it into two pieces and hollow it out. Set the pulp aside.
  3. Place the pumpkin halves on a baking tray and let them cook in the preheated oven for 45 minutes.
  4. Chop the leek and cut the leek into rings. Remove the seeds from the chili pepper and chop the flesh finely (watch your eyes!).
  5. Cut the zucchini and mushrooms into slices and the pumpkin flesh into pieces.
  6. Heat the butter in a frying pan over medium heat and fry the pumpkin flesh with the other vegetables and piri-piri herbs until everything is almost done.
  7. When the pumpkin halves are done, remove them from the oven and fill them with the pumpkin mixture and pieces of feta.
  8. Place the filled pumpkin halves back in the oven for about 5 minutes.
