Stir-fried curry shrimps with brown rice

What do you need?

For two persons:

  • 100 g brown rice
  • 1 onion
  • 1 clove of garlic
  • 1/2 red pepper
  • oil
  • 1 tsp piri-piri herbs
  • 200 g shrimps
  • 2 tsp curry powder
  • handful of spinach leaves
  • handful of bean sprouts

Preparation

  1. Cook the rice according to the instructions on the package.
  2. Finely chop the onion and garlic and cut the pepper into thin strips.
  3. Heat the oil in a wok and briefly stir-fry the onion and garlic together with the herbs.
  4. Add the pepper strips and shrimp and stir-fry briefly.
  5. Add the cooked rice, curry, bean sprouts and spinach and stir-fry until the spinach has shrunk.
