Groene soep

Green soup

This green soup is full of tasty, light ingredients. Delicious as a starter or tasty snack. Make it the night before and take it with you for lunch the next day.

What do you need?

For four people:

  • 2 broccoli

  • 2 zucchini

  • 1 l stock

  • 1 tbsp coconut oil

  • 200 g mushrooms of your choice

  • salt, pepper and herbs to taste

Preparation

  1. Cut the broccoli into florets and the zucchini into slices. Boil this briefly and save some of the cooking liquid.

  2. Put them in a food processor or blender and mix until you have a smooth mass.

  3. Return this mixture to a stockpot and add the stock.

  4. Let it rest for a while and add salt, pepper and herbs to taste. You can determine the thickness of the soup yourself by adding more or less stock.

  5. In the meantime, fry the mushrooms in the coconut oil.

  6. Pour the soup into deep plates and garnish with the fried mushrooms.
