Moroccan tagine

You won't find it healthier than this. Delicious vegetables with a warm spice mix make this dish a true taste experience.

What do you need?

For two persons:

  • 1/2 pumpkin
  • 1/2 red onion
  • 1 clove garlic
  • 1 knob of butter
  • 1 tsp ras el hanout
  • 1 tsp smoked paprika powder
  • 2 tbsp raisins
  • 125 ml of water
  • 175 g chickpeas (can)
  • 125 g couscous
  • 2 tsp sesame seeds
  • optional: chopped fresh coriander

Preparation

  1. Halve the pumpkin and remove the seeds and threads from the inside. Cut the pumpkin flesh into pieces and chop the onion and garlic finely.
  2. Heat the butter in a frying pan or in the tagine and fry the onion and garlic briefly until they are translucent. Add the pumpkin, ras el hanout herbs and raisins and fry briefly.
  3. Add the water and bring to the boil. Let everything stew for about 20 minutes on medium heat with the lid on the pan. Stir the dish regularly and add the chickpeas during the last 10 minutes.
  4. In the meantime, prepare the couscous according to the instructions on the package.
  5. Sprinkle the pumpkin tagine with the sesame seeds and coriander.
  6. Serve the dish with the couscous.
