Vegan roti filling with sweet potato

How can you make a roti even tastier? This filling is made with sweet potato. A delicious twist on a delicious classic. Full of flavor and full of proteins.

What do you need?

For two persons:
  • 1 onion

  • 2 cloves of garlic

  • 1/2 green jalapeño pepper

  • 4 tsp curry powder

  • 200 g chicken fillet or (vegetable) chicken pieces

  • 200 g sweet potato, peeled

  • 200 ml vegetable stock

  • 250 g green beans

  • optional: 2 hard-boiled eggs

Preparation

  1. Peel and chop the onion and finely chop the garlic. Heat a frying pan and stir-fry the onion and garlic over low heat for about 5 minutes until translucent.

  2. Cut the jalapeño pepper into rings and fry briefly with the curry powder. Be careful that the mixture does not burn.

  3. Cut the chicken fillet into strips and fry until almost done. You can also use Vivera Vegetable Chicken Pieces.

  4. In the meantime, peel the sweet potato, cut it into 2 cm cubes and fry briefly.

  5. Add the vegetable stock and bring to the boil. Stir carefully and cook over low heat for 8 minutes, until the potato is almost done.

  6. Add the green beans and cook for another 5 minutes. Serve with the hard-boiled eggs.
