What do you need?
For two persons:
- 75 g mozzarella light
- 100 g spinach
- 1 egg white (or 30g liquid egg white)
- 2 chicken fillets of 125 g
- olive oil
- salt and pepper and herbs to taste
- also needed: food processor
Preparation
- Preheat the oven to 180 °C.
- Mix the mozzarella, spinach and egg white with some salt and pepper in a food processor until smooth.
- Make a slit lengthwise in the chicken fillets and spoon in the spinach mixture.
- If necessary, secure the chicken with a skewer.
- Grease an oven dish with some olive oil and place the chicken in it with the folded side down.
- Place the dish in the oven and bake the chicken for about 25 minutes.
