Chicken fillet stuffed with spinach and mozzarella

What do you need?

For two persons:

  • 75 g mozzarella light
  • 100 g spinach
  • 1 egg white (or 30g liquid egg white)
  • 2 chicken fillets of 125 g
  • olive oil
  • salt and pepper and herbs to taste
  • also needed: food processor

Preparation

  1. Preheat the oven to 180 °C.
  2. Mix the mozzarella, spinach and egg white with some salt and pepper in a food processor until smooth.
  3. Make a slit lengthwise in the chicken fillets and spoon in the spinach mixture.
  4. If necessary, secure the chicken with a skewer.
  5. Grease an oven dish with some olive oil and place the chicken in it with the folded side down.
  6. Place the dish in the oven and bake the chicken for about 25 minutes.
