Meatballs with cauliflower puree

Nothing beats meatballs with gravy and mashed potatoes. Vary them with low-carb vegetables for variety.

What do you need?

For one person:

  • 150 grams of ground beef
  • 1 egg
  • 1 cauliflower
  • 2 tbsp butter
  • 2 tbsp cream
  • 1 bouillon cube
  • Salt and pepper
  • Spices for the meatballs (e.g. paprika powder, garlic powder, onion powder, parsley)

Preparation

  1. Place the ground meat in a bowl. Add the egg yolk (note: not the egg white), salt, pepper, and any desired spices (e.g., paprika, garlic powder, onion powder, and parsley).
  2. Mix everything well. Form small balls from the meat mixture.
  3. Heat 1 tablespoon of butter in a skillet over medium heat. Add the meatballs and cook until browned and cooked through. This will take about 10 to 15 minutes, depending on the size of the meatballs.
  4. In the same pan, make a gravy from the liquid, the stock cube and 1 tablespoon of butter.
  5. Cut the cauliflower into florets and cook them in a pan of water until tender, about 10 to 15 minutes.
  6. Drain the cauliflower and place it in a blender or food processor. Add the butter and cream to the cauliflower. Puree until smooth. Season with salt and pepper to taste.
  7. Garnish with fresh parsley or another green herb of your choice.
