Nothing beats meatballs with gravy and mashed potatoes. Vary them with low-carb vegetables for variety.
What do you need?
For one person:
- 150 grams of ground beef
- 1 egg
- 1 cauliflower
- 2 tbsp butter
- 2 tbsp cream
- 1 bouillon cube
- Salt and pepper
- Spices for the meatballs (e.g. paprika powder, garlic powder, onion powder, parsley)
Preparation
- Place the ground meat in a bowl. Add the egg yolk (note: not the egg white), salt, pepper, and any desired spices (e.g., paprika, garlic powder, onion powder, and parsley).
- Mix everything well. Form small balls from the meat mixture.
- Heat 1 tablespoon of butter in a skillet over medium heat. Add the meatballs and cook until browned and cooked through. This will take about 10 to 15 minutes, depending on the size of the meatballs.
- In the same pan, make a gravy from the liquid, the stock cube and 1 tablespoon of butter.
- Cut the cauliflower into florets and cook them in a pan of water until tender, about 10 to 15 minutes.
- Drain the cauliflower and place it in a blender or food processor. Add the butter and cream to the cauliflower. Puree until smooth. Season with salt and pepper to taste.
- Garnish with fresh parsley or another green herb of your choice.
