A classic with a modern twist. These delicious meatballs are accompanied with sweet potato puree. Just a bit different than normal!
What do you need?
For two persons:Meatballs:
- 200 g lean minced beef
- 1/2 onion
- 1 egg
- 1 tsp garlic pepper
- 1 tsp smoked paprika powder
- 40 g breadcrumbs
- 1 tbsp mustard
- 1 tbsp ketjap
- salt and pepper to taste
- 1 knob of butter
- 150 ml stock
Sweet mashed potatoes:
- 250 g sweet potatoes
- 2 tbsp almond milk
- 1 tsp mustard
- 2 tsp garlic pepper
- salt and pepper to taste
Preparation
- In a bowl, mix the minced meat with the chopped onion, the egg, the herbs, the breadcrumbs, the mustard, the soy sauce and salt and pepper.
- Knead the mixture into meatballs with wet hands and let the balls rest for half an hour in the refrigerator.
- In the meantime, peel the sweet potatoes and cut them into pieces. Place them in a pan of water with some salt and cook them for about 20 minutes.
- Remove the meatballs from the refrigerator after 30 minutes.
- Melt the butter in a deep pan, place the meatballs in it and fry until golden brown on all sides.
- Add the stock and fry the meatballs for about 40 minutes with the lid on the pan.
- Drain the cooked sweet potatoes and mash them with a pestle. Mix the milk, mustard and garlic pepper into the puree and season with salt and pepper.
