What do you need?
For two persons:
- 150 g whole wheat penne (uncooked weight)
- 1 tbsp olive oil
- ½ onion, chopped
- 1 clove garlic, finely chopped
- 3 tbsp pesto
- salt, pepper and herbs to taste
- 1 tbsp pine nuts
- 50 g rocket
- optional: 40 g Parmesan cheese
Preparation
- Prepare the pasta according to the instructions on the package. Drain and let it drain.
- Heat the olive oil in a frying pan and fry the onion and garlic. Add the pesto to the onion mixture. Then add the cooked pasta and mix everything well. Season the pasta with salt and pepper.
- Briefly roast the pine nuts in a dry frying pan.
- Garnish the pasta with the arugula and pine nuts and sprinkle with Parmesan cheese of your choice.
