Chicken fillet with lentils and sweet potato fries

Chicken and fries is of course a great classic. Also try this variant with sweet potato fries. Would you like to make this recipe vegetarian? Then replace the chicken with tofu or vegetarian chicken pieces, for example.

What do you need?

For two persons:
  • seasoning

  • 1 small can of pre-cooked lentils (160 g)

  • 1 stock cube (preferably organic)

  • 200 g chicken fillet, cut into cubes of 2 by 2 cm

  • 100 g sweet potatoes

  • Also needed: baking dish or ovenproof pan

Preparation

  1. Preheat the oven to 180°C.

  2. Peel the sweet potatoes, cut into thin fries. Sprinkle with salt and drizzle with 1 tbsp oil.

  3. Place all ingredients in the baking dish and mix together. Place the dish in the center of the oven and bake for 30 minutes.
