What do you need to make this oven-baked chicken?
For four persons:
- 4 chicken fillets (100 g each)
- 120g Serrano ham (or Zeeland bacon or other 'soft' bacon)
- 1/2 onion
- 2 cloves of garlic
- 4 tbsp pesto Genovese
- 4 tsp pine nuts
- salt, pepper and herbs to taste
The preparation of this tasty chicken from the oven
-
Season the chicken fillet with salt and pepper (the salt can be omitted if desired).
-
Place the slices of ham or bacon next to each other with just enough overlap.
-
Cover them with onion cut into half rings and thinly sliced garlic.
-
Spread the outside of the chicken fillet with pesto and place it on the ham with the pesto side down.
-
Now spread the other side with pesto and place 2 slices of ham (or bacon) lengthwise on the chicken fillet, just overlapping.
-
Place the chicken breasts, "good" side up, in a baking dish. Sprinkle with pine nuts and cover the dish with aluminum foil. Bake the chicken breasts in a preheated oven (180°C) for 25 minutes.
-
Remove the foil and bake the chicken fillet in the oven for another 10 minutes.
