Chicken Out Of The Oven

Delicious warm pieces of chicken fillet from the oven covered with bacon. Seasoned and a good protein-rich meal!

What do you need?

For four people:

  • 4 chicken fillets (100 g each)

  • 120g serrano ham (or Zeeland bacon or other 'soft' bacon)

  • 1/2 onion

  • 2 cloves of garlic

  • 4 tbsp Genovese pesto

  • 4 tsp pine nuts

  • salt, pepper and herbs to taste

Preparation

  1. Season the chicken fillet with salt and pepper (the salt can be omitted if necessary).

  2. Place the slices of ham or bacon next to each other, just overlapping.

  3. Cover them with onion cut into half rings and thinly sliced ​​garlic slices.

  4. Brush the outside of the chicken fillet with pesto and place the pesto side on the ham.

  5. Now brush the other side with pesto and place 2 slices of ham (or bacon) lengthwise on the chicken fillet, just overlapping.

  6. Place the chicken fillet with the 'good' side up in an oven dish. Sprinkle some pine nuts on top and cover the bowl with aluminum foil. Bake the chicken fillet in a preheated oven (180ºC) for 25 minutes.

  7. Remove the foil and bake the chicken fillet in the oven for another 10 minutes.
