This delicious meal will appeal to everyone and it is also vegetarian. Full of good ingredients and full of flavour.
What do you need?
For two persons:-
10 large green asparagus

1 tbsp olive oil, for frying

200 g sweet potato

250 g tofu
-
1 tbsp ground turmeric

1 tbsp soy sauce
-
1 handful of mixed lettuce, of your choice

2 tomatoes
-
1/2 cucumber
-
40 g hemp seeds
Preparation

Cut 2-3 centimeters from the woody ends of the asparagus. Heat a grill pan. Brush the asparagus with half of the olive oil and grill them in the hot pan for about 5 minutes until al dente. Turn them regularly.

Peel the sweet potato and cut into equal pieces. Boil the sweet potato for 10-15 minutes.

Heat the rest of the olive oil in a frying pan. Drain the tofu and crumble it into a bowl. Mix in the soy sauce and turmeric. Fry the tofu for about 7 minutes, stirring constantly in the frying pan. Season with salt and pepper.

Cut the tomato into quarters and the cucumber into small pieces. Divide the lettuce over 2 plates and divide the cucumber and tomato over it. Place the asparagus, scrambled tofu and boiled sweet potato on the plates. Sprinkle with the hemp seeds.
