Gegrilde asperges met scrambled tofu en zoete aardappel

Grilled asparagus with scrambled tofu and sweet potato

This delicious meal will appeal to everyone and it is also vegetarian. Full of good ingredients and full of flavour.

What do you need?

For two persons:
  • 10 large green asparagus

  • 1 tbsp olive oil, for frying

  • 200 g sweet potato

  • 250 g tofu

  • 1 tbsp ground turmeric

  • 1 tbsp soy sauce

  • 1 handful of mixed lettuce, of your choice

  • 2 tomatoes

  • 1/2 cucumber

  • 40 g hemp seeds

Preparation

  1. Cut 2-3 centimeters from the woody ends of the asparagus. Heat a grill pan. Brush the asparagus with half of the olive oil and grill them in the hot pan for about 5 minutes until al dente. Turn them regularly.

  2. Peel the sweet potato and cut into equal pieces. Boil the sweet potato for 10-15 minutes.

  3. Heat the rest of the olive oil in a frying pan. Drain the tofu and crumble it into a bowl. Mix in the soy sauce and turmeric. Fry the tofu for about 7 minutes, stirring constantly in the frying pan. Season with salt and pepper.

  4. Cut the tomato into quarters and the cucumber into small pieces. Divide the lettuce over 2 plates and divide the cucumber and tomato over it. Place the asparagus, scrambled tofu and boiled sweet potato on the plates. Sprinkle with the hemp seeds.
