Lettuce with mozzarella and chicken

What do you need?

For two persons:

  • 40 g quinoa (uncooked weight)
  • 200 g chicken fillet
  • 2 tsp piri-piri herbs
  • ½ pepper, of your choice
  • 80 g cherry tomatoes
  • ½ cucumber
  • 75 g mixed lettuce of your choice
  • 100 g mozzarella light
  • 1 tbsp olive oil
  • salt, pepper and herbs to taste
  • also needed: grill


  1. Cook the quinoa according to the instructions on the package.
  2. Season the chicken fillet with the piri-piri herbs. Preheat the grill to xxx °C and grill the chicken fillet for about xx minutes until done.
  3. Cut the pepper, tomato and cucumber into pieces and mix with the mixed lettuce. Also add the cooked and drained quinoa to the salad. Cut the chicken into strips and add that too. Finally, cut the mozzarella into pieces (or use small balls) and add them too.
  4. Season the salad with the olive oil and some salt and pepper.
