Sushi van quinoa

Quinoa sushi

What do you need?

For two persons:

  • 100 g quinoa (uncooked weight)
  • 1 tbsp rice vinegar
  • 2 tsp wasabi
  • ½ avocado
  • cucumber
  • 2 nori sheets
  • 60 g smoked salmon, sliced
  • optional: soy sauce

Preparation

  1. Cook the quinoa according to the instructions on the package. Drain and let cool. Place the quinoa in a bowl, mix in the rice vinegar and spread the wasabi over it.
  2. Cut the avocado and cucumber into narrow strips.
  3. Place a nori sheet on a rolling mat or piece of plastic wrap. Divide half of the quinoa over the nori sheet, leaving an edge free at the end as a sticky edge. Place the salmon along the length of the nori sheet and the cucumber and avocado next to it. Now roll up the sushi carefully and tightly. Moisten the adhesive edge with some water and seal the roll. Place the roll in the refrigerator.
  4. Make another sushi roll from the other nori sheet in the same way.
  5. Before eating the sushi, cut the rolls into slices. Serve with some soy sauce.
