Salad with avocado and bacon

Textures and flavors collide in this rich and nutritious salad. Looking for a change? Swap the bacon for smoked chicken.

What do you need?

For two persons:

  • 2 avocados
  • 4 slices of bacon
  • 1 bag of mixed salad (e.g. rocket, spinach, lamb's lettuce)
  • 1/4 red onion, thinly sliced
  • 125 g cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper

Preparation

  1. Cook the bacon slices in a skillet over medium heat until crispy. Remove from the pan and drain on paper towels. Crumble the bacon once it has cooled.
  2. Cut the avocados in half, remove the pit, and scoop out the flesh. Cut the avocado into cubes.
  3. In a large bowl, combine the mixed lettuce, avocado, red onion, and cherry tomatoes.
  4. In a small bowl, combine the olive oil and lemon juice. Season with salt and pepper.
  5. Pour the dressing over the salad and toss well. Sprinkle with the crumbled bacon.
