What do you need?
For two persons:
- 2 avocados
- 4 slices of bacon
- 1 bag of mixed salad (e.g. rocket, spinach, lamb's lettuce)
- 1/4 red onion, thinly sliced
- 125 g cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
Preparation
- Cook the bacon slices in a skillet over medium heat until crispy. Remove from the pan and drain on paper towels. Crumble the bacon once it has cooled.
- Cut the avocados in half, remove the pit, and scoop out the flesh. Cut the avocado into cubes.
- In a large bowl, combine the mixed lettuce, avocado, red onion, and cherry tomatoes.
- In a small bowl, combine the olive oil and lemon juice. Season with salt and pepper.
- Pour the dressing over the salad and toss well. Sprinkle with the crumbled bacon.
