Carpaccio salad with pesto

Enjoy a taste of Italy from your own kitchen. For this simple dish, choose better ingredients, like buffalo mozzarella or a beefsteak tomato, to make it truly shine.

What do you need?

For one person:

  • 1 large tomato
  • 1 ball of mozzarella
  • Fresh basil (a handful)
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper
  • 2 tbsp pesto (homemade or from a jar)

Preparation

  1. Wash the tomato and cut it into slices of about half a centimeter thick.
  2. Drain the mozzarella ball and cut it into slices of about half a centimeter thick.
  3. Alternate the tomato and mozzarella slices on a large plate or platter. Tuck a fresh basil leaf between each tomato and mozzarella slice.
  4. Drizzle the salad with olive oil and balsamic vinegar. Season with salt and pepper.
