This carrot cake is a delicious snack. Low in fat yet still super tasty.
What do you need?
For one cake (about ten slices):

400 g carrots

50 g raisins
-
4 drops of stevia

3 tsp cinnamon

2 tsp speculaas spices
-
4 eggs
-
125 g spelt flour
-
2 tsp baking powder
-
2 bananas
-
also: cake or pie tin
Topping:
- 100 g low-fat quark
- 40 g Killerbody Protein Shake
- vanilla
- juice of 1 lemon or lime
Preparation

Preheat the oven to 180°C.

Grate the carrots into a bowl and mix in the raisins, stevia, cinnamon and spices.

Beat the eggs in a large bowl and gently fold in the spelt flour and baking powder. Mash the bananas and fold them into the flour mixture. Add the carrot mixture and mix everything together until well combined.

Pour the batter into a greased cake tin.

Bake the carrot cake in the hot oven for about 25 - 30 minutes until golden brown and cooked through.

For the topping, mix the quark, Killerbody Protein Shake and lemon juice together.

Let the cake cool completely and then spread the topping over it or in between.
