Carrot cake with topping

This carrot cake is a delicious snack. Low in fat and yet super tasty.

What do you need?

For one cake (approximately ten points):

  • 400 g carrots

  • 50 g raisins

  • 4 drops of stevia

  • 3 tsp cinnamon

  • 2 tsp gingerbread spices

  • 4 eggs

  • 125 g spelled flour

  • 2 tsp baking powder

  • 2 bananas

  • also: cake or pie dish



  1. 1 Preheat the oven to 180 °C.

  2. Finely grate the carrots in a bowl and mix in the raisins, stevia, cinnamon and herbs.

  3. Beat the eggs in a large bowl and lightly fold in the spelled flour and baking powder. Mash the bananas finely and stir them into the flour mixture. Add the carrot mixture and mix everything together until you have a good batter.

  4. Pour the batter into a greased cake tin.

  5. Now bake the carrot cake for about 25 - 30 minutes until nicely browned and done in the hot oven.

  6. For the topping, mix the cottage cheese, Killerbody Protein Shake and lemon juice together.

  7. Let the cake cool thoroughly and then spread the topping over or in between.
