Lime cheesecake

What do you need?

For one cake tin (approximately ten points):

  • 200 g cashew nuts

  • 40 g grated coconut

  • 30 g pitted dates

  • 3 tbsp melted coconut oil

Filling:

  • ½ organic lime

  • 250 g ricotta

  • 200 g low-fat cottage cheese

  • 50g Killerbody Protein Shake

  • 60 g liquid egg white

  • Also needed: food processor and springform pan (24 cm diameter)

Preparation

  1. Preheat the oven to 185°C.

  2. Mix the ingredients for the base in a food processor and place this dough on the bottom of a springform pan lined with baking paper. Place the springform pan in the oven for 10 minutes.

  3. For the filling, grate the zest of the lime and squeeze it. Mix 1 tablespoon of lime juice and 2 tablespoons of lime zest with the remaining ingredients for the filling in a food processor until smooth.

  4. Remove the springform pan with the bottom from the oven and let the oven cool to 150 °C.

  5. Spoon the filling onto the base and place the cake in the oven for another 30 minutes.
