Stew with fried mushrooms

A real treat to enjoy. How nice that this also fits into your keto diet?

What do you need?

For a person:

  • 150 grams of stew meat (for example rib steaks or brisket steaks)

  • 100 grams of mushrooms

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 sprig of fresh rosemary, finely chopped (or 1 tsp dried rosemary)

  • 250 ml beef stock

  • 1 tablespoon butter

  • Salt and pepper to taste

Preparation

  1. Sprinkle the stew with salt and pepper.

  2. Heat the olive oil in a frying pan over medium heat. Add the meat to the pan and fry until brown all over. Then remove it from the pan and set it aside.

  3. In the same pan, add the chopped onion and fry until translucent. Add the garlic and rosemary and fry briefly.

  4. Return the meat to the pan and add the beef stock. Make sure the meat is just submerged.

  5. Bring to the boil, reduce the heat and let the meat simmer with the lid on the pan for 2 to 3 hours, or until the meat is very tender. Check in between and add extra stock or water if necessary to prevent drying out.

  6. While the meat is stewing, clean and slice the mushrooms.

  7. Heat the butter in a separate pan over medium heat. Add the mushrooms and cook until golden brown and tender, about 5 to 7 minutes. Season with pepper and a little salt.
