Vegetarian lasagne

 

What do you need?

For two persons:

  • 1 zucchini, sliced
  • 1 eggplant, sliced
  • 1 onion, sliced
  • 1 red pepper, cut into strips
  • 1 tbsp olive oil (10 g each), for frying
  • 2 tomatoes
  • 2 balls of mozzarella
  • Italian spices
  • salt, pepper and herbs to taste
  • tomato sauce

Preparation

  1. Grill the zucchini, eggplant, onion and pepper in a grill pan. Grease an oven dish with some olive oil.
  2. Build the lasagna layer by layer with the grilled vegetables (the vegetables can be rubbed with olive oil), tomato slices, mozzarella slices, Italian herbs, salt and pepper and a very small amount of tomato sauce per layer.
  3. Add some slices of mozzarella on top of the lasagna.
  4. Heat the lasagna in a preheated oven at 175ºC for 35-40 minutes.
