What do you need?
For two persons:
- 1 zucchini, sliced
- 1 eggplant, sliced
- 1 onion, sliced
- 1 red pepper, cut into strips
- 1 tbsp olive oil (10 g each), for frying
- 2 tomatoes
- 2 balls of mozzarella
- Italian spices
- salt, pepper and herbs to taste
- tomato sauce
Preparation
- Grill the zucchini, eggplant, onion and pepper in a grill pan. Grease an oven dish with some olive oil.
- Build the lasagna layer by layer with the grilled vegetables (the vegetables can be rubbed with olive oil), tomato slices, mozzarella slices, Italian herbs, salt and pepper and a very small amount of tomato sauce per layer.
- Add some slices of mozzarella on top of the lasagna.
- Heat the lasagna in a preheated oven at 175ºC for 35-40 minutes.
