Chicken with sweet potato from the oven

Always tasty: chicken from the oven. This meal becomes even better with the sweet potato that goes into the oven.

What do you need?

For two persons:
  • 300 g chicken thigh

  • 600 g sweet potatoes, peeled

  • 1 onion, finely chopped

  • 2 cloves garlic, finely chopped

  • 2 large tomatoes, diced

  • 20 g stock powder (preferably organic)

  • 2 tbsp (sweet) soy sauce

Preparation

  1. Preheat the oven to 210 °C. Sprinkle the chicken thigh on both sides with salt and pepper. Cut the sweet potatoes into 2 cm cubes.

  2. Mix the chicken, sweet potatoes, onion, tomato and garlic thoroughly in a large baking dish. Season with stock powder, soy sauce and a little salt and pepper. Distribute evenly in the baking dish.

  3. Place the oven dish in the middle of the oven and roast the chicken for about 35 minutes until golden brown and done.

  4. Divide the chicken with roasted vegetables over two deep plates.
Tip: Also delicious with green beans.
