Cod with chickpeas

A real protein booster! This delicious meal with cod and chickpeas is full of flavor and nutrients.

What do you need?

For two persons:
  • 4 eggs

  • 1 tbsp coconut oil

  • 300 g cod fillet

  • 1 clove garlic, minced

  • 1 onion, finely chopped

  • 300 g cooked chickpeas, rinsed

  • 100 g cooked corn

Preparation

  1. Boil the eggs for 5-6 minutes. Drain the cooking liquid, run the eggs under cold water and peel them.

  2. Heat the coconut oil in a frying pan, sprinkle the fish with salt and pepper. Fry on both sides over high heat until golden brown. Add the garlic and onions and fry.

  3. Turn the heat down slightly, add the chickpeas and corn and fry for 5 minutes.

  4. Divide the fish and chickpeas over two plates. Cut the eggs in half and place next to them.

Tip: Dried chickpeas have more flavor and bite. Soak them in cold water 24 hours in advance and cook for about 1 hour.

Vegetarian variation: Use tempeh or tofu instead of cod.
