Double sourdough sandwich with grilled vegetables and mozzarella

That's handy: vegetables for lunch. You will already have it today. With pesto and tomato, these sandwiches are a real treat. Buon appetito!

What do you need?

For two persons:

  • ½ zucchini
  • ½ eggplant
  • ½ pepper
  • 1 tbsp olive oil
  • 4 slices of sourdough bread
  • 2 tbsp pesto
  • 1 ball of light mozzarella, sliced
  • salt, pepper and herbs to taste

Preparation

  1. Slice the zucchini and eggplant with a cheese grater. Cut the pepper into strips. Brush the vegetables with olive oil.
  2. Heat the grill and roast the vegetables until nicely done.
  3. Spread the sandwiches with pesto and top them with the grilled vegetables and mozzarella. Sprinkle them with salt and pepper to taste and place under the grill.
