That's handy: vegetables for lunch. You will already have it today. With pesto and tomato, these sandwiches are a real treat. Buon appetito!
What do you need?
For two persons:
- ½ zucchini
- ½ eggplant
- ½ pepper
- 1 tbsp olive oil
- 4 slices of sourdough bread
- 2 tbsp pesto
- 1 ball of light mozzarella, sliced
- salt, pepper and herbs to taste
Preparation
- Slice the zucchini and eggplant with a cheese grater. Cut the pepper into strips. Brush the vegetables with olive oil.
- Heat the grill and roast the vegetables until nicely done.
- Spread the sandwiches with pesto and top them with the grilled vegetables and mozzarella. Sprinkle them with salt and pepper to taste and place under the grill.
