Fried eggs with roast beef and cheese

With this twist on an always delightful classic, you can be sure you have a tasty meal on your plate! High in protein and a fun variation on the typical ham omelet.

What you'll need

For two servings:
  • 1 knob of butter

  • 4 eggs

  • 4 slices of sourdough bread

  • 50 g roast beef

  • 2 slices of cheese, 25 g each

  • Salt, pepper, and spices to taste

  • Optional garnishes: pickles, tomato, and a leaf of lettuce

Preparation

  1. Heat the butter in a frying pan over medium heat.

  2. Crack the eggs carefully into the pan, allowing the yolks and whites to slide into the pan. Try to keep the egg yolks intact. Reduce the heat and let the egg whites slowly set.

  3. Top the slices of bread with ham or roast beef and cheese. Use a spatula to transfer the fried eggs onto the bread. Season with salt, pepper, and/or spices.

  4. Garnish as desired with pickles, tomato, or lettuce.
