Garlic curry shrimp

Do you like shrimp? Then try this recipe! Flavored shrimps with curry and garlic. Made this way, a source of protein and low in calories.

What do you need?

For two persons:
  • 1 tbsp coconut oil

  • 1 clove garlic, minced

  • 2 tsp (spicy) curry powder

  • 200 g peeled shrimp

  • 3 zucchini, cut into 2 cm cubes

  • 1 stock cube (preferably organic)

Preparation

  1. Heat half the coconut oil in a frying pan, add the garlic and curry and fry for 1 minute. Stir the shrimp into the curry and fry for about 5 minutes until golden brown and done. Season with salt and pepper. Remove the shrimp to a plate.

  2. Heat the remaining coconut oil in the frying pan, add the zucchini cubes. Crumble the stock cube and fry the zucchini over high heat for about 5 minutes until golden brown and done. The zucchini may still be a little crunchy.

  3. Divide the zucchini over two deep plates and spoon the shrimp over it.
Vegetarian variation: Delicious with crispy fried tofu.
