Shrimp salad with chicory

This salad is one of Fajah's favorites. The taste of chicory in combination with the shrimp is unique and very tasty. A delicious meal full of proteins.

What do you need?

For two persons:
  • 2 bushes of chicory, finely chopped

  • 2 large tomatoes, diced

  • 1 red onion, thinly sliced

  • ½ cucumber, peeled

  • ½ lemon, squeezed

  • 50 g white cheese (light)

  • 1 tbsp coconut oil

  • 200 g shrimps

  • salt, pepper and herbs to taste

Preparation

  1. Mix the chicory, tomato, red onion and cucumber in a bowl. Season with lemon juice, salt and pepper. Crumble the white cheese over it.

  2. Heat the coconut oil in a frying pan, sprinkle the shrimps with salt and pepper and fry over high heat for 5 minutes until golden brown and done.

  3. Divide the salad between two plates and place the shrimp on top.
