This salad is one of Fajah's favorites. The taste of chicory in combination with the shrimp is unique and very tasty. A delicious meal full of proteins.
What do you need?
For two persons:-
2 bushes of chicory, finely chopped

2 large tomatoes, diced

1 red onion, thinly sliced

½ cucumber, peeled
-
½ lemon, squeezed

50 g white cheese (light)

1 tbsp coconut oil
-
200 g shrimps
- salt, pepper and herbs to taste
Preparation

Mix the chicory, tomato, red onion and cucumber in a bowl. Season with lemon juice, salt and pepper. Crumble the white cheese over it.

Heat the coconut oil in a frying pan, sprinkle the shrimps with salt and pepper and fry over high heat for 5 minutes until golden brown and done.

Divide the salad between two plates and place the shrimp on top.
