A classic to enjoy. Replace the olive oil with butter for a fuller taste.
What do you need?
For a person:

4 eggs

A handful of fresh spinach

1 tbsp olive oil

Salt and pepper to taste
Preparation

Wash the spinach thoroughly and chop it coarsely. Make sure all excess water has been removed.

Break the eggs into a bowl and beat them well with a whisk or fork. Add salt and pepper to taste.

Heat the olive oil in a large frying pan over medium heat. Add the spinach to the hot pan and sauté briefly until the spinach is wilted, usually about 1 to 2 minutes.

Pour the beaten eggs over the spinach in the pan. Gently move the pan back and forth to ensure the egg spreads evenly and the spinach is nicely distributed.

Let the omelet cook without stirring until the edges begin to set and the top is almost completely set, about 3 to 4 minutes.

Use a spatula to gently fold the omelette, or turn it over using a plate if you want it cooked on both sides.
