Leftover casserole

Don't feel like going shopping? Or do you have leftovers from the previous day? Then make an easy 'leftover casserole'. Look at what you have left in your refrigerator, cupboards or freezer. Mix everything together and put it in the oven.

What do you need?

For two persons:

  • 150 g whole wheat pasta
  • 1 tbsp olive oil
  • 1 chopped onion
  • 1 clove garlic, minced
  • 1 leek
  • 1 zucchini
  • 1 spring onion
  • 400 g peeled tomatoes
  • 1 tsp garlic pepper
  • 1 tsp smoked paprika powder
  • 100 g feta (10% fat)
  • salt and pepper to taste

Preparation

  1. Preheat the oven to 180 °C.
  2. Cook the pasta according to the instructions on the package.
  3. Heat the oil in a frying pan over medium heat and fry the onion and garlic until translucent. Cut the rest of the vegetables into pieces and add them, together with the peeled tomatoes.
  4. Season with salt, pepper and herbs of your choice.
  5. Grease an oven dish with olive oil. First spoon the pasta and then the vegetable mixture into the bowl. Crumble the feta over the vegetables and bake the dish in the oven for about 15 minutes until the cheese has melted a little.
