A classic pasta salad with chicken. Full of protein and delicious flavor. Prefer a vegetarian option? Of course, that's possible. Replace the chicken with a plant-based alternative.
What do you need?
For two people:-
150 g whole wheat spaghetti

1 tbsp coconut oil
-
1 onion
-
2 cloves of garlic
-
2 large tomatoes, diced

80 g smoked chicken, cut into long thin strips
- Salt, pepper, and herbs to taste
Preparation

Cook the spaghetti according to the package instructions in plenty of boiling salted water until al dente. Drain and rinse the pasta with cold water.

Heat the coconut oil in a frying pan and sauté the onion and garlic.

Add the tomatoes and cook for 5 minutes.

Stir in the chicken strips and pasta with the sauce.

Divide between two deep plates.
Tip: Make the salad in the evening so you can take it with you the next day.
Vegetarian tip: Chop a mix of capers, green olives, and red pepper and stir into the pasta instead of using a meat alternative.
