A vegetarian burger made with mushroom buns . Fun to make with the kids. Definitely worth a try!
What do you need?
For two persons:-
4 portobello mushrooms

10 g uncooked quinoa

120 g chickpeas (drained weight)

30 g oatmeal

1 small boiled beetroot
-
2 tsp chili powder
-
1 tsp oregano
-
1 tsp sea salt
-
1 tomato
-
1/2 red onion
-
1/4 head lettuce

4 tbsp hummus
Preparation

Preheat the oven to 200°C.

Wipe the portobellos clean with paper towels and twist out the stem.

Cook the quinoa according to the instructions on the package.

Puree the quinoa, chickpeas, oatmeal, beetroot, chili powder, oregano and portobello stems in a food processor until you have a coarse mixture. Form two patties from the mixture and place them on a baking tray lined with baking paper. Bake the burgers in the oven for about 25 minutes until firm.

Heat a grill pan until hot and grill the portobello mushrooms for about 4 minutes. Turn them halfway. Remove them from the pan and let cool slightly.

Cut the tomato into slices and the onion into rings.

Top a portobello with a few lettuce leaves and a quinoa burger and spread with hummus. Place the tomato and onion on top. Cover with another portobello. Repeat for the other burger.
