This soup gives you a warm feeling inside. Perfect for the autumn and winter months. A savory soup with a sweet twist.
What do you need?
For four people:-
1 small pumpkin

1 clove of garlic
-
1 red onion

1 tbsp coconut oil

2 sweet potatoes (batato)

½ red pepper
-
2 sprigs of coriander or parsley

1 l vegetable stock

salt, pepper and herbs to taste
Preparation

Cut the pumpkin in half, remove the seeds and cut it into pieces.

Fry the garlic and onion in the coconut oil in a soup pan.

Add the pumpkin pieces, sweet potato, red pepper and coriander and fry for another 5 minutes.

Add the stock and bring to a gentle boil. Let it simmer for another 25 minutes, until the sweet potatoes are very soft.

Remove the coriander.

Puree the soup with a hand blender or in a food processor.

Finally, add salt, pepper and herbs to taste.
