Rice cakes with chicken breast, hummus and tomato

Delightfully light yet full of flavor. These rice cakes are great to kickstart your day! Super easy to prepare in the early morning and still so enjoyable.

What do you need?

For two persons:
  • 2 whole grain rice cakes

  • 2 tbsp hummus (approx. 60 g)

  • handful of lettuce leaves, optional

  • 40 g chicken breast slices (for sandwiches)

  • 1 tomato

  • pepper, salt, and seasoning to taste

  • optional: sprouts (such as alfalfa)


  1. Spread the rice cakes with hummus.

  2. Place the lettuce on the rice cakes and then top them with the chicken breast slices.

  3. Slice the tomato and distribute it over the chicken breast.

  4. Season with pepper, salt, and seasoning to taste.

  5. Optionally, you can finish it off with some sprouts.
