What you'll need

1 whole egg and 2 egg whites

1 knob of butter

2 rice cakes

5-6 cherry tomatoes, sliced

¼ cucumber, sliced

Preparation

Crack the egg into a bowl and whisk it together with the egg whites until fluffy.

Heat a frying pan with the knob of butter. Set the heat to low and pour the egg mixture into the pan. Cook the omelette for a few minutes until done.
