Enjoying a delicious meal, but in a conscious way. With this delicious roti you have the best of both worlds.

What do you need?

For two persons:
  • 1 onion
  • 3 cloves of garlic
  • 1/2 red chili pepper
  • 200 g potatoes, peeled and cut into large cubes
  • 1 tomato in cubes
  • 2 tbsp curry powder
  • 2 tbsp olive oil
  • 2 cubes of vegetable stock
  • 2 boiled eggs
  • 200 g green beans or long beans
  • 2 roti pancakes (from the store)
  • optional: 200 g chicken fillet

Preparation

  1. Finely chop the onion and garlic. Remove the seeds from the chili pepper and finely chop the flesh (watch your eyes!).
  2. Peel the potatoes and cut them into pieces and cut the tomato into cubes.
  3. Place the curry powder in a large frying pan without oil and stir the curry with a wooden spoon for 1 minute. Then add the olive oil, followed by the onion, garlic, tomato and chili pepper. Fry everything, but be careful not to let it burn.
  4. Add the potatoes to the pan and fry briefly.
  5. Crumble the stock cubes over the dish and add the eggs. Pour 200 ml of water into the pan and bring it to the boil.
  6. Reduce the heat to low, stir carefully and let the dish simmer until the potatoes are almost done.
  7. Now add the long beans or green beans and cook for another 5 minutes.
  8. Heat the roti pancakes and then fill them with the mixture.
  9. Optional: fry 200 g chicken fillet with garlic, curry powder and a pinch of salt until brown and add it to the dish.
