This toast is easy for when you want to start the day quickly.
What do you need?
For two people:

2 slices of sourdough bread

2 large sweet, ripe beefsteak tomatoes

2 cloves of garlic

extra virgin olive oil

2 boiled eggs
- salt, pepper, and herbs to taste
Preparation

Grill the sourdough bread briefly in a sandwich grill.

Halve the tomatoes and grate them coarsely using a vegetable grater over a bowl so that the skins and seeds remain on the grater. Squeeze the garlic and mix it with the tomato pulp.

Add pepper, salt, and herbs to taste, and mix a splash of olive oil into the tomato mixture.

Top the toasted bread slices with the tomato mixture. Serve with the boiled eggs.
