Salad with grilled shrimps

Tasty and low in carbohydrates. This salad is the perfect lunch. Not too heavy on the stomach, but a satisfied feeling thanks to the proteins and healthy fats.

What do you need?

For two persons:

  • 1 tbsp lemon juice

  • 1 tbsp white wine vinegar

  • 1 tsp smooth mustard

  • 2 tbsp extra virgin olive oil

  • 100 g lamb's lettuce

  • 1 shallot

  • 250 g shrimp (raw)

  • salt, pepper and herbs to taste
  • also needed: grill pan
  • optional: white cheese (light)

Preparation

  1. Mix the vinegar, lemon juice and mustard together in a bowl. Add the oil and season with salt and pepper.

  2. Mix the dressing with the lamb's lettuce in a large bowl.

  3. Cut the shallot into thin rings and stir into the salad.

  4. Heat the grill pan and fry the shrimp for about 2 minutes until they are done.

  5. Divide the salad between two plates and place the grilled shrimp on top.

    Tip: For a little extra spice, crumble a small piece of white cheese (light) over it.
