Spinach-zucchini soup

What do you need?

For two persons:

  • 10 g butter
  • 1 zucchini, cut into small pieces
  • freshly ground pepper
  • 1 tsp turmeric powder (or a piece of fresh turmeric)
  • 150 g spinach
  • 1 clove garlic, minced
  • ½ l vegetable stock
  • optional: some fresh sprouts, to garnish
  • also needed: hand blender

Preparation

  1. Heat the oil in a soup pan over medium heat and fry the zucchini.
  2. Add some pepper and turmeric. Add the spinach to the zucchini and fry the vegetables until the spinach has shrunk slightly. Add the garlic and fry briefly.
  3. Puree the vegetables with a hand blender until you have a smooth, even mass. Add the stock. Bring to the boil, reduce the heat and let the soup simmer for a while.
  4. Serve the soup of your choice with some fresh sprouts.
