What do you need?
For two persons:
- 10 g butter
- 1 zucchini, cut into small pieces
- freshly ground pepper
- 1 tsp turmeric powder (or a piece of fresh turmeric)
- 150 g spinach
- 1 clove garlic, minced
- ½ l vegetable stock
- optional: some fresh sprouts, to garnish
- also needed: hand blender
Preparation
- Heat the oil in a soup pan over medium heat and fry the zucchini.
- Add some pepper and turmeric. Add the spinach to the zucchini and fry the vegetables until the spinach has shrunk slightly. Add the garlic and fry briefly.
- Puree the vegetables with a hand blender until you have a smooth, even mass. Add the stock. Bring to the boil, reduce the heat and let the soup simmer for a while.
- Serve the soup of your choice with some fresh sprouts.
