What do you need?
For two persons:- 1 bottle gourd
- 1 red onion
- 1 leek
- 1/2 red chili pepper
- 1 zucchini
- 200 g mushrooms
- 1 knob of butter
- 1 tbsp piri-piri herbs
- 100 g feta (10% fat) in pieces
Preparation
- Preheat the oven to 200 °C.
- Scrub the bottle gourd clean, cut it into two pieces and hollow it out. Set the pulp aside.
- Place the pumpkin halves on a baking tray and let them cook in the preheated oven for 45 minutes.
- Chop the leek and cut the leek into rings. Remove the seeds from the chili pepper and chop the flesh finely (watch your eyes!).
- Cut the zucchini and mushrooms into slices and the pumpkin flesh into pieces.
- Heat the butter in a frying pan over medium heat and fry the pumpkin flesh with the other vegetables and piri-piri herbs until everything is almost done.
- When the pumpkin halves are done, remove them from the oven and fill them with the pumpkin mixture and pieces of feta.
- Place the filled pumpkin halves back in the oven for about 5 minutes.
