Stuffed omelette

There's nothing wrong with a delightful omelet from time to time. This wonderfully filled omelet is high in protein and well-seasoned.

What do you need?

For one person:

  • 1/2 small red onion

  • 1/2 tbsp olive oil (5g), for cooking

  • 30g chicken fillet, sliced ​​into strips

  • 30g fresh spinach

  • 1 egg

  • 2 egg whites

  • Salt, pepper, and seasonings to taste

Preparation

  1. Peel and chop the onion. Heat half of the olive oil in a pan over medium heat and sauté the onion on medium heat for about 3 minutes until translucent.

  2. Add the chicken fillet and fry for 5 minutes until golden brown and almost cooked. Add the spinach and let it wilt while stirring occasionally.

  3. Meanwhile, whisk the egg and egg whites in a bowl and add salt, pepper, and seasonings to taste.

  4. Heat the remaining olive oil in another pan and make an omelet.

  5. Top the omelet with the chicken-spinach mixture and roll it up.
