There's nothing wrong with a delightful omelet from time to time. This wonderfully filled omelet is high in protein and well-seasoned.
What do you need?
For one person:

1/2 small red onion

1/2 tbsp olive oil (5g), for cooking

30g chicken fillet, sliced into strips

30g fresh spinach

1 egg
-
2 egg whites

Salt, pepper, and seasonings to taste
Preparation

Peel and chop the onion. Heat half of the olive oil in a pan over medium heat and sauté the onion on medium heat for about 3 minutes until translucent.

Add the chicken fillet and fry for 5 minutes until golden brown and almost cooked. Add the spinach and let it wilt while stirring occasionally.

Meanwhile, whisk the egg and egg whites in a bowl and add salt, pepper, and seasonings to taste.

Heat the remaining olive oil in another pan and make an omelet.

Top the omelet with the chicken-spinach mixture and roll it up.
