Stuffed zucchini

This meal is fun for a special dinner, but also delicious to eat during the week.

What do you need?

Per one person:
  • 1 large zucchini

  • 1/2 tbsp olive oil, for frying

  • 30 g (vegetable) minced meat

  • 1/2 onion

  • 1 clove of garlic

  • 30 g mushrooms

  • 1 yellow pepper

  • salt and pepper


  1. Preheat the oven to 180°C.

  2. Halve the zucchini lengthwise and carefully remove the flesh with a spoon (do not throw it away), so that you get a kind of boat. Place the halves with the hollowed side up in an oven dish.

  3. Heat the olive oil in a frying pan and fry the vegetable minced meat for 2 minutes.

  4. Peel and chop the onion. Peel and finely chop the garlic. Cut the mushrooms into pieces. Remove the seeds and seeds from the pepper and cut it into cubes.

  5. Place the onion, garlic, mushrooms, pepper and zucchini flesh in the frying pan and fry for another 2 minutes.

  6. Season the vegetable mixture with salt and pepper and fill the hollowed-out zucchini with it.

  7. Bake the zucchini in the oven for about 20 minutes. Check whether the zucchini are done and, if necessary, put them in the oven for another 5 minutes.
