What do you need to fill the zucchini?
Per one person:

1 large zucchini

1/2 tbsp olive oil, for frying

30 g (vegetable) minced meat

1/2 onion

1 clove of garlic
-
30 g mushrooms
-
1 yellow bell pepper

salt and pepper
Preparation of the stuffed zucchini

Preheat the oven to 180°C.

Halve the zucchini lengthwise and carefully scoop out the flesh with a spoon (don't discard it), creating a boat-like shape. Place the halves, hollowed-out side up, in a baking dish.

Heat the olive oil in a frying pan and fry the minced meat for 2 minutes.

Peel and finely chop the onion. Peel and finely chop the garlic. Slice the mushrooms. Remove the seeds and membranes from the bell pepper and dice it.

Add the onion, garlic, mushrooms, bell pepper and zucchini flesh to the frying pan and cook for another 2 minutes.

Season the vegetable mixture with salt and pepper and fill the hollowed-out zucchini with it.

Bake the zucchini in the oven for about 20 minutes. Check if the zucchini are cooked through and, if necessary, bake for another 5 minutes.
