Toast with skinny omelette

Delicious toasts that are quickly made. An easy breakfast that's on the table in no time.

What do you need? 

For one person:

  • 1 slice whole wheat bread

  • 1/2 tbsp olive oil (5g), for frying

  • 2 eggs

  • 25g hummus

  • Bean sprouts for garnish

Preparation

  1. Toast the bread in a toaster.

  2. Separate the eggs and place the egg whites (the yolks are not used) in a bowl. Whisk briefly with a whisk.

  3. Heat the olive oil in a small frying pan, reduce the heat, and pour in the egg whites. Spread it on the pan bottom. Fry the omelet for a few minutes. Let it rest as much as possible in the pan. The omelet is thin and can quickly tear. When the omelet comes off the pan bottom, it's done, and you can carefully fold it in half. Let it sit on the stove a little longer until the inside is set.

  4. Spread the bread with hummus, top it with the thin omelet, and garnish it with bean sprouts.

  5. Season with pepper, salt, and spices to taste.
