Toast with tomato pulp

This toast is easy for when you want to start the day quickly.

What do you need?

For two people:

  • 2 slices of sourdough bread

  • 2 large sweet, ripe beefsteak tomatoes

  • 2 cloves of garlic

  • extra virgin olive oil

  • 2 boiled eggs

  • salt, pepper, and herbs to taste

Preparation

  1. Grill the sourdough bread briefly in a sandwich grill.

  2. Halve the tomatoes and grate them coarsely using a vegetable grater over a bowl so that the skins and seeds remain on the grater. Squeeze the garlic and mix it with the tomato pulp.

  3. Add pepper, salt, and herbs to taste, and mix a splash of olive oil into the tomato mixture.

  4. Top the toasted bread slices with the tomato mixture. Serve with the boiled eggs.
