tomato sauce

A classic that we like to use often. Tomato sauce tastes so much better when you make it yourself! Use good quality tomatoes for the best outcome.

What do you need?

For two persons:
  • 1 tbsp coconut oil

  • 1 onion, finely chopped

  • 1 clove garlic, minced

  • 1 small red pepper, seeds removed and finely chopped

  • 5 beefsteak tomatoes

  • 250 ml vegetable stock (preferably organic)

  • Salt, pepper and herbs to taste
  • Also needed: hand blender
  • Optional: handful of fresh basil

Preparation

  1. Heat the coconut oil in a heavy-bottomed pan. Fry the onion, garlic and red pepper for 5 minutes without coloring.

  2. Cut the tomatoes into small cubes and add to the pan. Stir together and add the stock. Bring the sauce to the boil, turn the heat down and cook the tomato sauce for 20 minutes until desired thickness.

  3. Season with salt, pepper and herbs.

  4. Turn off the heat and add chopped basil.
