This spaghetti made from zucchini is a lot lighter and fresher in taste than normal strings. Nowadays you can often find it ready-made in the supermarket. This recipe with a carbonara sauce is the perfect addition.
What do you need?
For two persons:-
3 large zucchini
-
2 eggs
-
1 tbsp coconut oil
-
1 onion, finely chopped
-
2 cloves garlic, minced
-
200 g smoked chicken strips
-
200 g light cream cheese
-
Also needed: vegetable spiralizer
Preparation
-
Cut the zucchini into long spaghetti strings on the vegetable spiral cutter.
-
Boil the eggs in boiling water for 4 minutes. Drain the cooking liquid and run the eggs under cold water.
-
Heat the coconut oil in a frying pan. Fry the onion and garlic for 5 minutes without coloring. Stir in smoked chicken strips and cream cheese. Season with salt and plenty of freshly ground pepper.
-
Heat the cream cheese and add the vegetable spaghetti. Stir everything together well.
- Divide the spaghetti between two deep plates, cut the soft-boiled eggs in half and place on top.
Vegetarian variation: Fry finely chopped shiitake strips with the onions instead of the chicken strips.
