Groentespaghetti carbonara

Vegetable spaghetti carbonara

This spaghetti made from zucchini is a lot lighter and fresher in taste than normal strings. Nowadays you can often find it ready-made in the supermarket. This recipe with a carbonara sauce is the perfect addition.

What do you need?

For two persons:
  • 3 large zucchini

  • 2 eggs

  • 1 tbsp coconut oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 200 g smoked chicken strips

  • 200 g light cream cheese

  • Also needed: vegetable spiralizer

Preparation

  1. Cut the zucchini into long spaghetti strings on the vegetable spiral cutter.

  2. Boil the eggs in boiling water for 4 minutes. Drain the cooking liquid and run the eggs under cold water.

  3. Heat the coconut oil in a frying pan. Fry the onion and garlic for 5 minutes without coloring. Stir in smoked chicken strips and cream cheese. Season with salt and plenty of freshly ground pepper.

  4. Heat the cream cheese and add the vegetable spaghetti. Stir everything together well.

  5. Divide the spaghetti between two deep plates, cut the soft-boiled eggs in half and place on top.

Vegetarian variation: Fry finely chopped shiitake strips with the onions instead of the chicken strips.
