Meatloaf

This dish is gluten and lactose free. What's nice about this recipe is that you can also make it with vegetarian minced meat. This makes it suitable for everyone. The recipe is full of good nutrients and is rich in protein, perfect after an intensive day.

What do you need?

For two persons:
  • seasoning

  • 200 g beef tartare (or vegetarian minced meat)

  • ½ egg or 1 small egg

  • 1 head little gem

  • 1 cucumber, thinly sliced

  • 2 tomatoes on the vine, cut into wedges

  • 2 tbsp herbal vinegar

  • Also needed: an oven dish

Preparation

  1. Preheat the oven to 200°C. Let the seasoning simmer gently for 15 minutes. Keep 2 tbsp aside for garnish.

  2. Knead the beef tartare, egg and seasoning together in a bowl. Divide evenly over the baking dish. Brush the top with the 2 tbsp seasoning. Place the oven dish in the middle of the oven and bake for about 20 minutes until golden brown and done.

  3. Toss the cucumber and tomato in a bowl with the vinegar, salt and pepper. Let marinate for 15 minutes. Stir again in between.

  4. Separate the lettuce leaves and divide them between two plates.

  5. Spoon the cucumber salad next to it. Serve with the meatloaf and garnish with the seasoning.
